Ingredients:
-1lb. coconut
-1 can condensed milk
-sugar
-desired nuts
-food coloring(depending on occasion)
-wax paper
- container
Preparation:
First,pour condensed milk into a pot with medium heat. Slowly mix in sugar. Prep. your coconut, If from a bag this step is not needed, by scraping coconut out of the shell. My dad always did this part because I considered it very tedious. He would even add a little extra sugar in as he scraped it out for extra sweetness.
Next, add your scraped or bagged coconut to the sugar and condensed milk mixture, until its thick yet all is evenly covered by the syrup. Now add the desired food coloring; since we make it for Halloween we color ours orange. Let the mixture stand until cool. During this time me and my dad would play games. His favorite was a game called word power, which judging by the name, was a vocabulary game. He loved to use large words to confuse me so this game suited him. Of course time after time he beat me, and would end every round with the phrase,"One day you'll beat me."
"If only that day was today", I'd reply.
After that, lay your wax paper out on a flat surface such as a counter or table. Pour the mixture out on your wax paper, and flatten. This was my favorite part, aside from eating it of course.
My dad would always say,"Remember you don't want to get it too thick or too thin."
Then I would say,"I know, I know I've done it a thousand times!"
Now you want to take your nuts of choice, we usually use pecans, and crush them. You can do this by putting them in a zip-lock bag, and laying that bag on a thick rag or towel. Then, smash the nuts with a meat tenderizer.
After they are crushed you want to line them up down the center of the sheet of coconut. Then roll one side of the sheet of wax paper over the nuts.Then peel the wax paper off of the coconut leaving half of it rolled.Then bring the other side up and over the previous coconut. now you have your log.
Last you roll the log up in the wax paper and let it sit over night to harden. Now for the best part, eating it! I still remember my dad saying,"It's so nasty you don't want any," just to hog it as he scarfed the bites down.
